Ingredients

For Chia Seed Pudding:

  • 1/4 Cup chia seeds
  • 1 Cup unsweetened almond milk (or your preferred milk)
  • 1 Tablespoon pure maple syrup (adjust to taste)
  • 1/2 Teaspoon vanilla extract

For Berry Compote:

  • 1 Cup mixed berries (strawberries, blueberries, raspberries)
  • 1 Tablespoon pure maple syrup
  • 1/2 Teaspoon lemon juice
  • 2 Tablespoons toasted almonds, chopped (for garnish)

Instructions

Chia Seed Pudding:

  1. In a mixing bowl, combine chia seeds, almond milk, maple syrup, and vanilla extract. Stir well.
  2. Cover and refrigerate for at least 2-3 hours or overnight, stirring occasionally to prevent clumps.
  3. Once thickened, give it a final stir.

Berry Compote:

  1. In a small saucepan, combine mixed berries, maple syrup, and lemon juice.
  2. Cook over low to medium heat, stirring occasionally, until the berries break down and the mixture thickens slightly (5-7 minutes).
  3. Let it cool for a few minutes.

Assembly:

  1. Spoon chia seed pudding into serving glasses or bowls.
  2. Top with berry compote.
  3. Sprinkle with toasted almonds.
  4. Serve and enjoy!
